The long wait for new potatoes

April 11th 2006. In Bordeaux, France, 44° 50’ N, ?0° 34’ W, the asparagus season is in full swing. In Rymättylä, southwestern Finland, 60°21’ N 21°41’ E, a couple of inches snow covers the fields dedicated to growing the earliest of early potatoes in Finland. The harvest must mature by midsummer to make the effort worthwhile. Producing food north of the 60th northern latitude has its thrills. And its rewards.
